Turkey, Quinoa & Spinach Balls | Hudson County Moms

The other night I was on my usual Instagram crawl to find out what’s going on locally when Jersey City Mamas Marisa’s Meatballs grabbed my attention. I love meatballs for a plethora of reasons: they are easy to make ahead and store for a quick go-to meal, I’d rather a meatball than say, a cookie, for a snack (I’m a savory girl unless it’s cake; then all bets are off) and they are generally a crowd pleaser amongst the littles, all wins for me! I immediately reached out and she was lovely enough to share her recipe with me, so here you go and thank you again Marisa!

Turkey, Quinoa and Spinach Balls

1 pound organic ground turkey
1 cup cooked quinoa
1 ½ cups chopped organic spinach (fresh, not frozen)
1 egg
¾ cup breadcrumbs
Dried oregano, salt and pepper to taste

Preheat the oven to 350 and lightly grease cooking sheet(s). Cook quinoa according to packet instructions and let cool. Once cooled, mix all of the ingredients well in a large mixing bowl.
Form into meatballs and bake for 25-30 minutes.
Enjoy!

Now I love this simplicity and will be making these very soon, I’m thinking with some pesto? Drooling, yum!
